Happy Hibiscus Chia Seed Pudding

Need a quick and healthy dessert idea? Chia seeds are high in fibre and antioxidants, making this chia seed pudding a go-to recipe for packable lunches or dinner parties!

Ingredients:

2 Tbsp B&T Happy Hibiscus Honey

2 cups almond milk

6 Tbsp Chia seeds

Fresh Berries

Directions:

  1. Combine almond milk, B&T Happy Hibiscus Honey, and Chia seeds in a medium-size mixing bowl. Mix well until the honey has fully dissolved.
  2. Cover and refrigerate for at least 4 hours but preferably overnight.
  3. Stir well and divide the pudding into equal portions in dessert cups.
  4. Top with fresh berries and a drizzle of honey.
  5. Serve and enjoy!

Chipotle Honey-Glazed Drumsticks

These Chipotle Honey-Glazed Drumsticks are easy to make and they’re the perfect dish to impress your dinner guests!

Serves 6.

Cook Time: 1 hour 30 mins

Total Time: 1 hour 40 mins

Ingredients:

12 Chicken drumsticks

Onion Powder, to taste

Garlic Powder, to taste

Seasoning Salt, to taste

Beary Berry Honey Chipotle Honey Glaze

Directions:

  1. Preheat oven to 300 degrees.
  2. Line a roaster with aluminum foil and place a baking rack inside the pan.
  3. Add a small amount of water to the bottom of the pan. This will keep the chicken nice and tender.
  4. Season the drumsticks with onion powder, garlic powder, and a bit of seasoning salt on both sides and place on baking rack in roaster. Do not cover roaster.
  5.  Bake for approximately 1 hour and 20 minutes, or until chicken is thoroughly cooked.
  6. Remove from oven and brush with Beary Berry Honey Chipotle Honey Glaze.
  7. Turn oven up to 350 degrees. Return drumsticks to oven and allow to bake for another 10 minutes or until the sauce has thickened and turned sticky.
  8. Serve with our Garlic Balsamic Glazed Potatoes and a side of fresh veggies.

Bacon-Wrapped Baby Potatoes with Honey

This is an easy and delicious recipe that works great as an appetizer or side dish. Serves 6.

24 baby potatoes

12 slices of bacon

2 oz (57g) of your favourite Beary Berry Honey flavoured honey

sour cream (optional)

1. Preheat oven to 350 F (180 C) and line a baking sheet with parchment paper.

2. Cut each slice of bacon in half and wrap one half-slice around each potato, securing with a toothpick.

3. Place the potatoes on prepared baking sheet and bake for 30 minutes or until bacon is browned and potatoes are tender.

4. Remove from oven and drizzle with honey.

5. Serve with sour cream, if desired.

Honey-Garlic Chicken Wings

This recipe takes time and patience, but is so worth it in the end. Sticky, sweet goodness! Serves 6 to 12. 

1 tsp ground ginger
1 tsp granulated garlic, granulated
1/4 cup low-sodium soy sauce
1/4 cup oyster sauce
1/2 cup Beary Berry Honey
1.5 kg chicken wings
2 tbsp sesame seeds, black & white for garnish
2 green onion, finely sliced – green part only

  1. Stir together the ginger, garlic, soy sauce, oyster sauce, and honey. Pour half the marinade into a large baking dish or large resealable bag and add the chicken wings. Massage to coat. Marinate at least 4 hours, overnight if you have time. Reserve the remaining marinade for basting the wings as they roast.
  2. When ready to cook, place oven rack in upper third of oven and preheat to 425°F.
  3. Line a baking sheet with foil and lightly oil the foil.
  4. Arrange the meat in a single layer on the baking sheet (but don’t crowd – use two pans if your baking sheets are small).
  5. Roast the chicken wings about 20 minutes. Turn them over and roast another 15 minutes. Turn over, baste, and repeat every 10 minutes until gorgeous, sticky and cooked through, about 60 to 70 minutes total.
  6. Remove the pan from the oven, arrange the chicken wings on a platter, and garnish them with the sliced green onion and sesame seeds.

 

Tips, Suggestions & Information

  • You can use our clear or creamed, 100% pure, unpasteurized honey. If you use our Ginger Honey, skip the ground ginger.
  • If you like it spicy, add 1/2 tsp ground red chili or 1 to 2 tbsp Sriracha sauce to the marinade.
  • This works well with chicken thighs. Simply roast longer to cook them through.
  • This also works well for chicken skewers using thinly sliced boneless, skinless thighs or breasts. Marinate them just an hour or two.
  • Works great with thinly sliced pork ribs or beef ribs – these benefit from marinating 24 hours.
